Trộn đều lòng đỏ trứng, 25g đường và dầu ăn trong tô bằng phới lồng. Thêm nước cốt chanh, sữa chua vào tô, trộn đều. Trộn đều bột mì và bột bắp rồi rây bột vào tô trứng.
Trong tô khác, đánh lòng trắng trứng bằng máy đánh trứng cho nổi bọt, rồi thêm muối và nước cốt chanh vào. Đánh tốc độ chậm khoảng 30 giây rồi từ từ cho 55g đường vào đánh cùng đến khi lòng trắng bông cứng. Nếu không có máy đánh trứng có thể đánh bằng tay.
Múc 1/3 chỗ lòng trắng trứng cho vào tô bột và lòng đỏ, dùng phới cầm tay trộn đều để làm loãng bớt hỗn hợp trứng - bột. Cho 2/3 lòng trắng trứng còn lại lần lượt cho vào tô trộn nhẹ tay, dứt khoát và theo một chiều – không đảo xuôi ngược lung tung và lưu ý không quấy nhé!
Chia bột vào cup giấy cứng hoặc khuôn cupcake đã lót cup giấy mềm, cho vào lò nướng 150-160 độ C (lò đã được làm nóng trước 10-15 phút) trong 30-35 phút hoặc đến khi bánh chín vàng mặt, ấn nhẹ lên mặt bánh thấy lập tức phồng trở lại, cắm que thử vào giữa bánh rút lên thấy que sạch và khô. Bánh sau khi lấy ra khỏi lò có thể ăn luôn hoặc đợi nguội hẳn rồi trang trí bằng kem tươi là có thể dùng.
